Pink Wedding Popcorn Recipe

Nostaligia is a key player in the recent resurgence of sweet coloured popcorn. It is even making an appearance at Weddings. It can be used as a favour, decoration or late-night snack at the reception. Pink is the traditional colour but there is no reason not to colour it with orange, blue, yellow or green. To up the whimsy-factor even more, do batches in a rainbow of colours and invite guests to fill their own snack bowls or favour bags.

The internet is full of recipes for Pink Popcorn. Here is one that I have tried. I suggest practising in the months prior to the wedding so that you have perfected the technique, experimented with quantities and also tested its shelf life. You may find that it must be made the day before or maybe it is just as fresh a week later. These are all things that you want to sort out without the pressure of the event looming.

Pink Popcorn Recipe
~2 cups white sugar
~1 tbsp butter
~1/2 cup water
~red food coloring
~2 cups unpopped popcorn

Directions:
~Preheat oven to 200°. Boil the rest of the ingredients for 3 minutes then pour slowly over the popcorn. Mix well then place in the ovwn on a cookie sheet for about 10 minutes to dry it. Keep an eye on it so that it does not burn.

Cream Cheese Sugar Cookie Recipe ~ Best EVER!

Whether you are baking for the holidays or preparing your own homemade weddingfavours- this simple recipe for Cream Cheese Sugar Cookies is sure to be a hit. I tried it myself last night just to be sure. Great results!

Ingredients:
1 cup softened butter
1 8oz package of cream cheese
1.5 cups white sugar
1 egg
1 tsp vanilla
1/2 tsp almond extract
3.5 cups white flour
1 tsp baking powder

Directions:
Preheat oven to 370.
Mix (by hand or stand mixer) butter and cream cheese until well combined.
Add sugar- mix until smooth
Add egg, vanilla and almond extract
Beat well
In a medium bowl, combine flour and baking powder.
Add to cheese mixture and beat until well mixed.
Divide batter and cover.
Chill in refrigerator.
Roll dough and cut using cookie cutters.
Bake 12 minutes on ungreased cookie sheet.

At this point the dough is sort of goopy. If you form it into a ball and put it into the fridge it will firm up and become nice and elastic. It is very easy to roll out and cut into shapes.

The dough is nice and elasticy when when you roll it out. Dip cookie cutters in flour so that the cookies will come out and hold their shapes.

I didn’t actually use a recipe for my frosting but this is one that works well. I added a little Almond Extract to my frosting to match the flavouring of the cookie.

Icing Recipe:
3 cup sifted confectioner’s sugar
1/4 cup milk
1/2 tsp vanilla
Dash of salt

Combine ingredients and mix well. Add food colouring if desired. Decorate with a pastry bag and embellish with silver balls candies or sprinkles. Let them dry and then store them in a sealed container with parchment paper between the layers.

Here is the finished product! I brought them into the office today and I have been very popular. They make a great wedding favour. Consider baking 3-4 per person and packaging them up as a special treat for all your guests.

Hot Chocolate Buffet at a Winter Wedding Reception

Picture this:

Cold Winter Wedding- it is dark outside. Inside your guests are dancing and visiting. Beautiful dark linens on a long table. A natural centerpiece using white painted branches and silver snowflakes. Several carafes of different hot cocoas (white hot chocolate, milk chocolate cocoa, dark chocolate and mocha blend).

This is where it gets fun!

~You can offer a variety of flavoured syrups and liqueurs. Hazelnut, Irish Cream, Almond, raspberry, mint.

~Whipped cream, sprinkles, cinnamon, chocolate shavings, marshmallows, flavoured drizzles, powdered sugar (chocolate, butterscotch, vanilla, strawberry)

~Cinnamon sticks and candy canes make great stir sticks and decorative finishes.

~Place a personalized mug at each place setting. Your guests will assume it is just the favour to take home (make sure they have all been run through the dishwasher and are usage-ready). Partway through your reception you can unveil your surprise.

~Guests can create their own specialty hot chocolate beverage. This is such a great heartwarming addition for a cold winter evening. You can do a non-alcoholic buffet or include alcohol to fit your crowd, event and liquor licensing restrictions.
